Enhancing Industry Knowledge through Hands-On Classification Training

Meat & Livestock Classification (MLC) Head of Operations, Steve Hamilton, recently conducted an educational session in collaboration with Kepak, aimed at enhancing understanding and skills in meat classification within the industry. This training highlighted the importance of independent classification in maintaining fair standards and valuation within the sector.

Training Session OverviewIn this photo, MLC's Head of Operations, Steve Hamilton, passionately explains the finer points of meat classification to a group of attentive participants inside a meat processing plant. The background features a large hanging carcase which serves as a practical example during the demonstration.

Participants engaged in hands-on activities, learning to assess conformation and fat class directly on live animals. This practical approach helped illustrate the significant impact of accurate classification on market prices and producer payments.

Further, the session included a walkthrough of the classification process, where attendees were introduced to modern techniques and systems used to ensure quality and compliance in meat production. Additionally, Steve explained the importance of MLC’s independent verification of dressing specifications to ensure producers do not lose money through over trimming of carcases.

This initiative is part of MLC's commitment to fostering a deeper understanding of the industry's operational standards and ensuring transparency and fairness in meat classification.
